Pride Month is almost over, but we’re not stopping the celebrations anytime soon. To help you keep on celebrating Pride here’s a simple recipe for a Pride-themed cauliflower rainbow pizza perfect for parties and summer get-togethers.

You Will Need:

- 1 head of cauliflower

- ¼ cup parmesan cheese

- 1 ¼ cup mozzarella cheese

- 1 egg

- ½ teaspoon garlic powder

- Seasonings (salt, pepper, and basil to taste)

- ½ Pot Pizza Sauce

- 1 cup bell peppers, diced (yellow, green, and orange)

- ½ cup broccoli florets

- ½ cup red onion, diced

- ½ cup tomatoes, diced

Making Your Rainbow Pizza Base

Preheat your oven to 500°F.While your oven is preheating, cut your cauliflower into medium-sized chunks and add them to a food processor.

Pulse the cauliflower in the processor to a fine consistency.

Microwave the cauliflower on high for roughly 5 minutes, then let it cool.

Wrap the processed cauliflower in a clean tea towel and squeeze it over the sink to remove any water. Make sure there is no water left in it. You should be left with a dense, dry ball of cauliflower crumbs.

Combine the cauliflower with the egg, parmesan cheese, and seasonings (including the garlic powder) until the mixture has a doughy texture.

Place the mixture onto a baking tray lined with lightly greased parchment paper.

Spread the mixture out into a thin circular crust.

Bake the crust for 10-15 minutes until the edges are slightly golden and crispy.

Don’t have a food processor? Use a grater to grate your cauliflower instead.

The Key To Making Great Rainbow Pizza

If there’s one key aspect of this recipe, it’s the part about draining the cauliflower. For the best results, make sure to use a clean, soft tea towel and remember to really squeeze the cauliflower to remove as much water from it as possible.

If you don’t, your base will end up a mushy, soggy mess. And we don’t have to tell you how terrible soggy pizza is. Also, remember to let your cauliflower cool after it's been in the microwave to avoid getting burned.

Topping Your Rainbow Pizza

All you need to do now is add your toppings. Start by spreading on your pot pizza sauce (learn how to make it here), followed by a layer of mozzarella cheese, and finish it all off with your veggies. Just remember to arrange them in a rainbow pattern.

Remember, you can use all kinds of ingredients to top your rainbow pizza. Just make it colorful! Here are some fun toppings you can use to mix things up a little:

- Asparagus

- Jalapenos

- Spinach

- Arugula

- Corn

- Pineapple

- Pickled banana peppers

- Pepperoni

- Green or kalamata olives

- Sun-dried tomatoes

- Grilled zucchini

- Grilled eggplant

- Roast pumpkin

There you have it! This pizza is not only delicious, it’s healthy, too! Remember, if you’re bringing this pizza to a Pride party, be sure to let your friends know there’s cannabis in the sauce. Happy Pride Month!
